If you’ve got a sweet tooth today, you’re in luck because we’re baking up Italian Lemon & Cannabis Knot Cookies.

I don’t think there’s anything better when it comes to cookies than adding fresh lemon into them!

Then to top it off, they’re going to be twisted so that just makes them fun to make and even more fun to eat.

You’ll need a few fresh ingredients to bake these bad boys:

  • 6 eggs
  • lots of sugar
  • cannabutter to brush on top of each cookie
  • flour
  • baking powder
  • lemon zest
  • cannabis oil

How To Make Cannabutter

You’ll need to make cannabutter for today’s cookie recipe – and we’re going to brush it on top of each cookie before we bake them.

You can save cannabutter or freeze it for weeks and then just keep coming back to our recipes and bake!

Ingredients

  • 1/4 to 1/2 Ounce Cannabis 
  • 1 cup Butter

Instructions

  • Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.
  • Grind your dry cannabis or chop it till fine.
  • Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • Strain your butter through a cheesecloth.
  • Cool down
  • Now you can use the Cannabis Butter (Cannabutter)

Notes

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.

How To Twist Your Cookies

It’s simple – you’re going to cut out even portions of your prepared dough (recipe coming) and then with your hands, roll it out into what I like to call a long snake.

Make sure each snake is the same length and thickness, generally, and then you’re going to take both ends and bring them up the centre and press.

You can also twist them any way you want to be creative – this is the fun part!

Equipment

  • Large Bowl
  • Parchment Paper
  • Cookie Sheet
  • measuring cups and spoons
  • hand blender/mixer
  • Pastry Brush
  • Spatula
  • Plastic Wrap

Ingredients

  • 1 cup white sugar
  • 4 cups flour
  • 2 1/2 tbsp baking powder
  • 1/4 cup cannabis oil
  • 1 lemon – zested
  • 3-4 tbsp cannabis oil save for end

Instructions

  • With your hand mixer, beat eggs and sugar very well.
  • Slowly add in flour and baking powder a little at a time into the bowl.
  • Next, add cannabis oil and zest of one whole lemon.
  • Mix well with a spatula and then with your hands, roll it into a log, and wrap with plastic wrap. Place in the fridge for about 30 minutes.
  • Remove from fridge and cut it in half, then in quarters. Roll out your pieces into snakes, trying to make sure they are all the same length and diametre.
  • With each little "snake" bring the ends together and meet them at the top and press gently. You can also have a little fun and find creative ways to twist them up.
  • Bake for 20 minutes on 350.

ICING

  • 3 cups icing sugar
  • fresh lemon juice from one lemon.
  • Dip each cookie into the icing, and let cool.
  • Enjoy!
