Healthy, gourmet and easy to make! Today we’re cooking up Chicken, Tomato & Cannabis Stuffed Squash.
The weather in Canada is so unpredictable lately. The weather forecast is off almost always, and it’s hard to know what to eat or how to dress!
Because of the current chill in the air, I decided that it would be good to bake up a nice, stuffed squash.
It’s so easy, loaded with fresh ingredients that are good for you, and the best part for me besides the taste? Hardly any dishes! Yahoo!
Is Squash Good For You?
The very quick answer is YES! But why? I’ll tell you:
This veggie is a serious nutritional powerhouse that is ‘high’ in:
Vitamin A, B6 & C
Folate
Magnesium
Fiber
Riboflavin
Phosphorous
Potassium
All in one little squash? Oh yeah! So while you’re nibbling away and enjoying how flavourful this recipe is, you’ll also be infusing some health right into you at the same time.

What Kind Of Squash Do I Use?
For today’s recipe, we’re going to use a spaghetti squash. If you’ve never had it before, it’s the funnest squash on the block.
After it’s done baking in the oven, you can literally use two forks and shred the insides out, and it looks just like spaghetti!
This dish is great for vegetarians if you remove the chicken, but if you need a little meat you can always brown up some ground beef and sprinkle that on top too.
What Other Ingredients Do I Need?
Sometimes the most flavourful recipes are simple and they just work, right?
This is no exception.
You’ll need:
Spaghetti Squash
Boneless, skinless chicken breasts
Garlic
Tomatoes
Fresh spinach
Cannabis Oil (we’ll get to this in a minute)
Salt, Pepper, Crushed Red Pepper
Marinara Sauce
How Do I Make Cannabis Oil?
Follow along below, for step-by-step instructions on how to properly make and create cannabis oil:
With a sharp knife, slice the squash in half. If you're having a tough time, you can pierce the outside of the squash with fork holes all over, and put in the microwave for 3-4 minutes to soften for cutting up.
Scoop out the seeds, brush with 2-3 tbsp cannabis oil, salt, and pepper, and place face down on a baking tray. Bake for 35-40 minutes or until a fork can easily pierce the skin.
In the meantime, heat cannabis oil in a large pan. Add chicken breasts (seasoned with salt and pepper) and garlic, and fully cook.
Add tomatoes and spinach. Cook until spinach has wilted. Add marinara sauce.
Cut basil into small slices and add to pan.
Add crushed red pepper, and stir until the ingredients are fully incorporated.
Once the squash has finished roasting, remove from the oven and let it sit for a few minutes before turning over and pulling at it with a fork. Oven mits are your best friends here.
Shred the inside of each side of the squash, being careful not to poke through the skin. Pour the sauce over the shredded squash, top with fresh basil, and serve.
