I was in the mood for something that would knock my diet off its rocker, and this edible dessert is the winner! Today we’re making Strawberry Earthquake Cake.

It’s a breeze to whip up and is swirled with delicious cheesecake filling, so it ticks all the boxes for flavour, texture and taste.

What Ingredients Do I Need?

Beside love? You’ll need a few ingredients such as:

  • Strawberry cake mix, plus ingredients called for in package)
  • Cream cheese
  • Cannabis Butter
  • Vanilla
  • Powdered sugar
  • White chocolate chips
  • Strawberries
  • Whipped cream

How Do I Make Cannabutter?

If you’re new to cannabutter, you’re in for a treat because once you nail it once, you’re good to go for life.

You 100% have to decarb first – and don’t try to skip this step – it’s the most important!

Why? Because raw weed doesn’t have activated THC. Heating the flower (think of smoking it) in the oven, activates THC so you’ll have an edible that feels like an edible once it kicks in.

Ingredients

  • 1/4 to 1/2 Ounce Cannabis 
  • 1 cup Butter

Instructions

  • Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.
  • Grind your dry cannabis or chop it till fine.
  • Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • Strain your butter through a cheesecloth.
  • Cool down
  • Now you can use the Cannabis Butter (Cannabutter)

Notes

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.

  • 9 x 13 glass casserole dish/cake pan
  • Mixing Bowls
  • Measuring cups
  • Cutting Board
  • Sharp knife

Ingredients

  • 1 box strawberry cake mix
  • 8 oz cream cheese softened
  • 1/2 cup cannabutter
  • 1 1/2 tsp vanilla
  • 2 cups powdered sugar
  • 1 cup white chocolate chips
  • 1 cup strawberries fresh
  • 1 cup whipped cream or 1 can

Instructions

  • Preheat the oven to 350 degrees, grease a 9×13″ pan, set aside.
  • Pour batter into the prepared pan.Sprinkle with white chocolate chips.
  • Melt cannabutter( a few seconds in microwave at a time until melted) then mix with cream cheese, and vanilla toether. Fold in strawberries.
  • Spoon dollops of cream cheese mixture over cake, swirl gently with a knife.Bake for 40-45 minutes. Remove from the oven and let cool.Cut into slices and top with whipped cream and strawberries if desired.
