Pumpkin Spice Pot Truffles

In honour of Halloween and the love of all things pumpkin today we’re non-baking Pumpkin Spice Pot Truffles!

Made with real pumpkin puree, these truffles are super indulgent and surprisingly easy to prepare.

Coated in white chocolate and sprinkled with graham cracker crumbs, I know you’ll love them just as much as me!

They taste even better the second and third day – if they even last.

Ingredients Needed:

You’ll need to pick up a few things or check your pantry. If you’re anything like me, you forgot to check the pantry first, then end up with three of the same things.

So let this be a reminder: Check Your Pantry FIRST!

Here’s what you’ll need to have:

  • Full fat cream cheese
  • confectioners sugar
  • pumpkin puree
  • graham cracker crumbs
  • pumpkin pie spice
  • cinnamon
  • white chocolate
  • cannabis sugar

Easy Peasy Overview

These truffles come together quickly in just a few simple steps.

  1. Make the filling. Use a hand mixer or stand mixer and cream everything together until super duper smooth.
  2. Chill the filling. This is the most important step! Before you can roll it, you have to chill it – easier and better to work with.
  3. Roll the filling into balls. Use about 1 teaspoon per truffle.
  4. Chill the truffle balls. After rolling each truffle, chill them one more time. This time for only 30 minutes or so.
  5. Dip in chocolate. Does it get any better?
  6. Let chocolate set. Refrigerate the dipped truffles for 30 minutes or until chocolate has completely set.

How Do I Make Cannabis Sugar?

We’re going to coat the balls in graham crackers and cannabis sugar so you’ll need to know how to do that properly.

It isn’t as simple as just grinding up your favourite ganja and sprinkling in amongst some white granulated sugar. We wish!

  • Add 4 cups of sugar into a glass bowl.
  • Add ½ cup of cannabis tincture and mix well with the sugar.
  • Line a tray with parchment paper, and even spread the sugar over the parchment paper in a thin layer.
  • Let stand overnight.
  • Using a solid object, like a bottle, can or the bottom of a glass, crush up the cannabis sugar to remove the lumps. You can also do this step in a food processor, or blender.

Ingredients

  • 2 oz cream cheese full fat, softened to room temp
  • 2 tbsp confectioners sugar
  • 1/3 cup pumpkin puree
  • 1 3/4 cup graham cookies
  • 2 tsp cannabis sugar more if you like sweetness
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon ground
  • 4 oz white chocolate chopped and melted

Topping

  • 10 oz white chocolate coarsely chopped and melted
  • 5 tbsp cannabis sugar
  • 1/2 cup graham cookies
  • 2 tsp cinnamon ground

Instructions

  • With a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese and sugar together in a large bowl until creamy – about 2 minutes. Add the pumpkin and beat on high until combined. Add the graham cracker crumbs, cannabis sugar, pumpkin pie spice, cinnamon, and melted chocolate. Beat on medium speed for 2 minutes until everything is combined. The mixture is supposed to be soft and thick. Cover mixture tightly and refrigerate for 1 hour or up to 24 hours. Chilling is mandatory.
  • Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  • Begin rolling chilled mixture into balls (about 1 teaspoon per ball) and place the balls on the baking sheets. Chill balls in the refrigerator for 30 minutes or up to 24 hours.
  • During the last few minutes of the chilling time, begin melting the chocolate. You can melt the chocolate in a double boiler or the microwave. If using the microwave: place the chocolate in a medium heat-proof bowl.
    Melt in 30 second increments in the microwave, stirring after each increment until completely melted and smooth. Let the warm chocolate sit for 5 minutes to slightly cool before dipping. Alternatively, you can temper the chocolate. If tempering, do not place or store truffles in the refrigerator.
  • Remove balls from the refrigerator and dip them in the chocolate using a dipping tool. When lifting the truffle out of the chocolate, remember to tap the dipping tool gently on the side of the bowl to allow excess chocolate to drip off.
    Top truffles with a sprinkle of graham cracker crumbs, cannabis sugar, and cinnamon.
  • Allow chocolate to completely set in the refrigerator before serving. Truffles are OK at room temperature for a few hours for serving.
