Loaded Zucchini Boats

Even if you aren’t a fan of zucchini, you may just change your mind when you try our Loaded Zucchini Boats.

This is the single best way to get all of the nutrients of zucchini, with none of the bloating and all of the taste.

With a few simple ingredients, a little patience, and some cannabis – you’ll have these edibles in under 30 minutes.

Can You Really Make Zucchini Taste Good?

I used to belong to the: “I hate zucchini club” until I discovered these boats.

I didn’t like the slimy texture to be honest, and many of you may be nodding your heads in agreement.

Let me convince you otherwise because, in today’s recipe, you scoop out the insides, create fun little boats, load them up with yummy passengers, pour melted cannabutter over top and voila! Tasty!

Zucchini actually have a high fibre content and low calories which means you can eat a lot, but still feel great afterward.


How Do I Make Cannabutter?

If you haven’t made it before it’s very easy to make when you follow our step-by-step instructions.

Make sure you decarb your weed – don’t skip this step or you won’t have success!

Ingredients

  • 1/4 to 1/2 Ounce Cannabis 
  • 1 cup Butter

Instructions

  • Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.
  • Grind your dry cannabis or chop it till fine.
  • Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • Strain your butter through a cheesecloth.
  • Cool down
  • Now you can use the Cannabis Butter (Cannabutter)

Notes

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.

Equipment

  • Baking Sheet
  • Parchment Paper
  • Cheese Grater
  • Oven
  • Non stick frying pan

Ingredients

  • 1 cup cannabutter melted
  • 2 whole zuchinnis
  • 1 lb ground beef, lamb or chicken dethawed
  • 1 cup shredded cheese of choice or feta
  • 1/2 cup bell peppers sliced very small
  • 1/2 cup jalapeno peppers sliced very small *optional
  • 1 dash salt & pepper each
  • 1 whole tomato Roma if you can find one

Instructions

  • Pre heat the oven to 375 F
  • While the oven is pre-heating, slice the zucchini length wise so you have 'boats'. With a spoon, gently scoop out the insides and discard.
  • Pat the insides of your zucchini boats with paper towel.
  • On medium heat, fry up your ground meat using cannabutter in the pan and a litte salt & pepper to taste.
  • Once cooked fully, drain and place aside.
  • Grate your cheese or prepare your feta crumble. Slice peppers very small and dice tomatoes. Feel free to take creative control and add in anything you like- being careful not to overload the boats.
  • Take turns with each boat layering first, the ground meat, veggies and cheese. Melt your cannabutter and drizzle generously over top of each boat.
  • Place in the oven for approximately 10-15 minutes until everything is nice and brown and melted. You may wish to leave it in longer if you like a little more charred taste to the boats. Enjoy!
