Chocolate Kahlua Cannabis Cupcakes

Bundle up my friends! It’s that time of year where scarves and gloves start coming out of hiding, and we can enjoy the best of the season like Chocolate Kahlua Cannabis Cupcakes.

Do you love pouring Kahlua over ice? In coffee? How about in martini glasses?

One of the best parts about colder weather is finding ways to stay warm (wink, wink) and this is one of my favorite ways!

Where Does Kahlua Come From?

Kahlua was first made in Mexico where sugar, rum, vanilla bean, and arabica coffee all made friends and created this spectacular drink.

The name comes from the Arabic language which is supposedly slang for coffee.

Did you know? It takes up to seven years to produce a bottle of Kahlua and then another year to distill the spirits in the coffee and infuse the flavors.

I guess the saying is true! “Good things come to those who wait!”

Equipment

  • Bowls – 3-4
  • Whisk
  • Cupcake Mold & Cupcake liners
  • Measuring cups
  • Measuring spoons
  • Oven & Timer

Ingredients

  • 2 Large Eggs
  • 1 cup All Purpose Flour
  • 1/2 tsp Baking Soda
  • 1/3 cup Cocoa powder
  • 1 cup Granulated Sugar
  • 1/4 tsp Himalayan salt
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Cannabis Butter
  • 1/3 cup KAHLUA
  • 1/3 cup Water

ICING

  • 1/2 cup Butter
  • 2 3/4 cup Powdered Sugar
  • 3 tbsp Kahlua
  • 3 sprinkls cocoa, or cocoa nibs for garnish optional

Instructions

  • Preheat your oven to 350 F
  • Line a 12-cup cupcake or muffin pan with paper liners
  • Mix your cocoa and water together in a small bowl until smooth and set aside
  • In a separate bowl, stir flour, baking soda and salt – set aside
  • In another bowl, beat Cannabis butter and sugar with an electric mixer until fluffy
  • then in the same bowl as your Cannabis butter, add in vanilla, eggs and Kahlua.
  • Beat in the cocoa and water mixture and continue until smooth
  • Lower the speed and beat in all dry ingredients until everything is combined and smooth.
  • Pour the mixture into each cupcake mold- about halhway full. Cook for about 12-15 minutes for larger cupcakes.

ICING

  • Beat butter until fluffy with an electric mixer
  • Slowly beat in powdered sugar
  • Add a little Kahlua each time until you've reached the icing consistency you like.
  • Garnish with nibs or nuts, cocoa or anything else you love!
