There is often an assumption that carrot cake is plain and boring. No so with our delicious Cannabis Carrot Cake. Boasting tropical highlights of coconut and pineapple, luscious raisins and crunchy walnuts, your palate will be riding the flavour highway. (No pun intended). Feeling decadent? Substitute pecans for the walnuts and ramp it up a notch.
The batter for this cake is very thick making it a bit harder to mix. This is normal. The end product is well worth the bit of extra elbow grease. Just be cautioned, your Cannabis Carrot Cake may have to be kept under lock and key! It’s really that good!
Tip: For a special occasion, ice your Cannabis Carrot Cake with a buttery cream cheese frosting. Mix ½ cup butter with 8 ounces of cream cheese using the back of a wooden spoon. When soft and blended, add 2 cups icing sugar and finish with a teaspoon of vanilla extract. If you feel the frosting is on the sweet side, a dash of lemon juice will help. Be sure to cool the cake before frosting.
