Berry Streusel Bars With Weed

There’s nothing better than healthy, wholesome weed recipes and today we’re making Berry Streusel Bars With Weed.

Layered with fresh fruit, oats, cannabis oil, almond butter and applesauce – not only are these a welcome treat when you feel like an edible, they’re also pretty healthy!

What is Streusel?

From what we know and understand, streusel originated in Germany.

Streusel, pronounced: Strew-sell translated to it’s simpliest form means sprinkles.

So streusel is a sprinkling of a mixture of delicious crumbly ingredients that sit beautifully at the top of a bar or cake.

The top layer is crunchy-crumbly, and the inside layer is gooey and decadent!

How Do I Make Edibles?

Edibles, when following our recipes correctly, can be the nicest and tastiest way to enjoy cannabis.

You’ll always want to be careful because if you’re new to the weed-world, edibles take longer to kick in, so don’t chow down quickly hoping for fast results.

When eating edibles, use the Marijuana Mantra:

You can use and create a variety of staples when it comes to baking or cooking with cannabis.

Cannabis butter, for example, can be used in cookies, cakes, stir-fries and hearty lunch and dinner dishes.

Cannabis oil can be used in salads, baking, and as a tasty drizzle on veggies.

And of course, you can create Cannabis sugar which is a welcome addition to a hot cup of tea, coffee, or any baking where you want to infuse weed into the recipe.

What Does This Recipe Require?

First, we’ll make our cannabis oil. Using the step-by-step recipe below, you’ll need ot decarb your weed first.

Once that’s done, making oil is relatively easy!


Ingredients For Berry Streusel Bars With Weed

With it’s crumbly-top texture, and soft-sweet centre, you’ll love this bars loaded with flavour and cannabis.

The best thing to do is when you’re finished and the bars have cooled, cut them up into squares, and pop them into the freezer with proper labels so you can pull them out any time of day!

You’ll need:

  • fresh mixed berries
  • cornstarch
  • pure maple syrup
  • coconut sugar or brown sugar
  • gluten free oats
  • cinnamon
  • almond butter
  • applesauce
  • cannabis oil

Berry Filling: it’s like a thick, juicy jam and holds everything together!

Streusel: crunchy and crumbly, it’s literally the icing on the cake!

Notice we aren’t using eggs or flour? This is great for anyone on a restrictive diet too!

Baking Tips

This is a super yummy recipe, but it does take time. Set aside the space and appropriate time that it takes so you won’t be disappointed!

Having a dedicated space where you can cool the bars, while making sure little one’s don’t touch (if you have children) is super important.

You can always sub in granulated white sugar, or Swerve Sugar too.

Doubling up on this batch means a little more work, but a bigger yield and more options for edible snacks in the future!

Ingredients

Berry Filling

  • 1 1/2 tbsp cornstarch
  • 2 cups fresh or frozen berries do not thaw the frozen berries if you decide to use this option
  • 1 1/2 tbsp water
  • 1/4 cup pure maple syrup
  • 1 tbsp sugar coconut sugar, brown or granulated. You can also use Swerve.

Streusel & Crust

  • 2 1/2 cups old fashioned, gluten-free rolled oats
  • 1/2 tsp ground cinnamon
  • 1 cup almond butter
  • 1/4 cup pure maple syrup
  • 1/2 cup applesauce unsweetened
  • 1/4 cup Cannabis Coconut Oil
  • 1/2 cup Chopped almonds save until the end

Instructions

  • Berry Filling: Whisk the cornstarch and water together until all the cornstarch has dissolved. Make sure you use cold water, not hot.
    Put the cornstarch mixture, berries, maple syrup, and sugar of choice in a medium saucepan over medium heat. Using a rubber spatula, stir the mixture as it cooks. Stir constantly.
    After 2 minutes, remove pan from the heat and allow to cool completely.
    Don't worry! The mixture will thicken as it cools.
  • Next, preheat oven to 350°F.
    Line the bottom and sides of an 8-inch or 9-inch square baking pan with parchment paper.
  • Next, we'll make the crust/streusel: Pulse the oats in a food processor or blender until they’re slightly broken up.
    Pour into a bowl and stir in the cinnamon, almond butter, maple syrup, applesauce, and cannabis coconut oil. Mixture will be thick and wet – exactly what you want!
  • Put the mixture into the prepare pan, using the spatula flatten it down. Make sure it’s flat and very compact, which helps guarantee the bars will hold their shape.
    Then, you can spread cooled berry filling evenly on top.
  • For Your Topping: Mix the sliced almonds into the remaining crust/streusel mixture. Sprinkle all over the top of the berry filling. Sprinkle oats evenly on top. (Helps soak up some moisture.)
  • Bake for 27-31 minutes or until the topping is lightly browned. Remove from the oven and place baking pan on a cooling rack. Allow bars to cool completely. Cut into squares.
